The production process is standardised and controlled phase by phase.

The use of innovative technologies helps us to safeguard the quality of the product and to extend its Shelf Life, to bring fresh and coloured baby leaf salads to the table.

The use of innovative technologies helps us to safeguard the quality of the product and to extend its Shelf Life, to bring fresh and coloured baby leaf salads to the table.

A great start begins with healthy soil

Preparation of the soil

Before starting each production cycle, we analyse the soil and check there are no diseases and parasites that could ruin the crops. Depending on the time of year we choose the most suitable crops to sow each time.

Sowing

We carefully select the seeds, through an ongoing varietal research to make sure we only supply tasty and genuine baby leaf salads. Mechanised equipment is used to sow the seeds in our greenhouses to make this phase faster and more accurate.

We protect our salad leaf by leaf

Care

During the growth of baby leaf salad, we continually carry out analysis, preventive assessments and manual weeding, depending on the time of year and the type of baby leaf sown. The constant caring for the soil and the growth of each leaf allows us to preserve the quality and goodness of our produce.

Weather forecasts

Our greenhouses are equipped with weather control units and recording stations used to monitor the temperature and humidity present in the greenhouses and in the environment every single day. The monitoring of weather conditions allows us to intervene in a preventive and targeted manner and protect the crops both during the cold and hotter months of the year.

Harvesting our baby leaf salads

We adopt out a fully mechanised ‘just in time’ harvesting method at all our production sites. This procedure preserves the integrity and quality of the individual salad leaves and allows us to check the harvesting operations in real time, immediately identifying the presence of any foreign organisms that could damage the quality of the final product.

Control

After harvesting the crops in the greenhouse, the baby leaf salads are moved inside our farming facilities, where optical sorting machines and manual controls are used to ensure further sorting of all the harvested salads. During this phase, the lamb’s lettuce is the only Baby Leaf that undergoes the pre-washing, drying and automatic sorting process using an optical sorting machine, while the other Baby Leaf salads move on to the next phase without being pre-washed.

Packaging

After being carefully checked, our baby leaf salads are ready to be packaged in trays or bags. We use a mechanised process equipped with a metal detector and automatic weight control unit. The packaging is sealed with food-grade film. Upon request we can provide customised film with logos and information.

Shipping

Once packaged, the baby leaf salads are ready to leave our plant facility heading for the main Italian and European destinations. Our Baby Leaf salads travel in refrigerated trucks respecting the cold chain requirements, at a temperature of between +4°C or +6°C: We ensure they reach their destination in the shortest time possible, to maintain their properties intact and allow them to be served while they are still fresh and tasty.
